Coconut Cookies with Malibu Rum Filling


All this snow and cold weather has me wishing I was on the beach, sipping a fruity drink out of a coconut. Since that won't be happening anytime soon, I decided to make some coconut cookies with a creamy Malibu rum filling.  One bite of these cookies and it's like you're right on the beach!

These cookies are quick and easy to make since they start with a cake mix. Feel free to top the cookies with shredded coconut or mix it straight into the batter. I didn't have any shredded coconut on hand so I used red sprinkles on top to give the cookies a little color.



Coconut Sandwich Cookies with Malibu Rum Filling
Makes about 3 dozen

For Cookies:
1 box coconut cake mix
1/3 cup water
1 egg
1/4 cup melted butter

For Frosting:
1/4 cup butter, softened
2 cups powdered sugar
1 teaspoon milk
1 tablespoon Malibu rum (I used mango flavor)

Preheat oven to 350. Mix cake mix, water, egg, and butter together in large bowl until well blended. Drop by teaspoon-fulls onto an ungreased cookie sheet. Bake for 10-12 minutes, or until cookies just barely start to brown around the edges. Let cookies cool for 2 minutes on cookie sheet before transferring to a cooling rack.

To make the frosting: using an electric mixer, slowly add the sugar to the butter until completely mixed. Blend in milk and rum.

Once the cookies are cool, sandwich two cookies together with a layer of thin (or thick!) icing. Take a bite, close your eyes, and feel the warm breeze on your face....
