Do not let the plain exterior of these cookies fool you. While they may look like ordinary chocolate chip cookies, they are not.
My best girlfriend recently told me about an amazing chocolate chip cookie she had that had a brownie inside the cookie. I thought this idea was genius but wasn't sure how to get the brownie inside. I was thinking that maybe brownie batter was put in the middle of the cookie dough but that method just seemed too messy and besides, the cookies would finish baking before the brownie. So, how is it done? Well, the answer is much simpler than I thought.
To get the brownie center, you simply put a piece of already baked brownie into the ball of cookie dough. I know! So simple! And yes, the brownie center stays nice and moist even though it has been baked twice.
These cookies were really delicious and I dipped some of them in chocolate for extra decadence!
Brownie Pillow Cookies

1 package brownie mix
1 cup butter, room temperature
1 1/2 cups packed light brown sugar
2 large eggs, plus 1 egg yolk
1/2 tablespoon vanilla
2 1/2 cups all purpose flour
2 teaspoons baking powder (I used bread flour--it was all I had)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup semi-sweet chocolate chips
Make brownies according to package and let cool. Cut about 30 1 inch squares. Eat the remaining brownies or mix them into some ice cream.
For the chocolate chip cookie dough, beat butter with a mixer until creamy. Add brown sugar and beat until smooth. Add eggs, yolk and vanilla. Beat until smooth.
Combine flour, baking powder, soda and salt in a medium bowl and stir together with a wire whisk. Add flour to butter mixture and beat until combined. Stir in mini chips.
Let dough chill covered in the refrigerator for at least an hour.
Preheat oven to 350 degrees.
Taking a heaping tablespoon of dough, flatten it in your hand. Place a brownie in the middle (I found it easier to roll the brownies into balls). Roll the dough around the brownie. Flatten slightly on cookie sheet. Make sure the dough is thoroughly chilled or it will become very sticky and hard to work with.
Bake for 12 minutes.
Let cookies cool on the baking sheet for 5 minutes and then cool completely on a wire rack.

ReplyDelete@Katherine- You can use any chewy or cakey cookie dough. Cookie doughs that produce thin and cripsy cookies would spread out too much for the brownie to stay inside the cookie.
