Sour Cream Apple Pie


To me, apple pie is more of a fall dessert and I never really think to serve it during the summer. I decided to serve a cooler, summer version of the traditional pie at a recent get together at my in-laws since my father-in-law is a huge apple pie fan. The pie is served chilled and is filled with sour cream and apples, making a nice cool, creamy center. And, just like traditional apple pie, it tastes great with ice cream!

Be sure to use a baking apple for this pie, as some apples do not hold up well during baking and will become mushy. I used granny smith and thought they held up great. Also feel free to use your favorite pie crust recipe in place of mine.

Sour Cream Apple Pie
Serves 8
Adapted from All-Time Favorite Pies
 
For crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/3 cup cold butter, cut into pieces
3 to 4 tablespoons cold water
 
For pie:
2 slightly beaten eggs
1 cup sour cream (I used fat free)
1 cup sugar
2 tablespoons flour
1 teaspoon vanilla
1/4 teaspoon salt
3 cups chopped baking apples (about 1 pound)
 
For topping:
1/3 cup flour
1/3 cup oats
1/3 cup sugar
1/4 teaspoon salt
1/4 cup butter, melted
1/2 teaspoon vanilla
 
To make crust:
Lightly grease a 9 inch pie plate.
 
Put flour and salt in food processor. Pulse to combine. Add butter pieces and pulse until butter pieces are about the size of peas. With processor running stream in 2 tablespoons of water, adding more water if needed, until dough is just moistened enough to hold together. Form dough into a ball and let rest in the refrigerator for 1 hour (I didn't do this as I was short on time).
 
Roll dough out on a floured surface, forming a circle about 12 inches in diameter. Gently move crust into pie plate. I find it easiest to wrap the dough around the rolling pin and unroll it over the pie plate. Trim the crust edges if necessary and make a fluted or scalloped edge.
 
To make pie:
Combine eggs and sour cream; stir in the sugar, 2 tablespoons flour, vanilla, and salt. Stir in apples. Pour apple mixture into pie plate.
 
To make topping:
Combine flour, oats, sugar, and salt in a small bowl. Pour in melted butter and vanilla and stir to combine. Sprinkle mixture over the top of the pie.
 
Bake for 20-25 minutes at 375. If the edges brown too quickly, cover them with foil until the filling is set. Chill thoroughly before serving.

  2. Of Course there was a crumbly crunchy sweet topping- It wouldn't be right if you made something fruity and it didn't have strudel-y like topping. Sounds yummy!

  5. I'm always interested in a new apple pie recipe. I love apple pie any time of year but this one sounds great for a summer meal.
